Grilled Ginger Chicken
- 4 boneless, skinless chicken breasts
- 1/2 cup mayonnaise
- 3 Tbsp Celtalan of Conwy Orange Marmalade
- 1 Tbsp soy sauce
- 1/4 Tsp ginger (I used at least 1/2 tsp or more of fresh grated)
- 1/8 tsp cayenne pepper (optional, I used a little more)
- Flatten chicken to 1/4 inch thickness.
- Place on grill pan rack. Grill for 3 minutes on each side.
- Combine remaining ingredients to make sauce and brush over chicken.
- Grill 3 more minutes on each side
