Grilled Ginger Chicken

Serves: 4

Ingredients:
  • 4 boneless, skinless chicken breasts
  • 1/2 cup mayonnaise
  • 3 Tbsp Celtalan of Conwy Orange Marmalade
  • 1 Tbsp soy sauce
  • 1/4 Tsp ginger (I used at least 1/2 tsp or more of fresh grated)
  • 1/8 tsp cayenne pepper (optional, I used a little more)

Method:
  1. Flatten chicken to 1/4 inch thickness.
  2. Place on grill pan rack. Grill for 3 minutes on each side.
  3. Combine remaining ingredients to make sauce and brush over chicken.
  4. Grill 3 more minutes on each side
